So in the interests of being prepared, I looked up some possum recipes. Here's one and here's another. The best tip I found is a suggestion that before killing the possum, it should be caged for a week and fed corn. This will help the meat taste better. Also while skinning and cleaning the possum you must be sure to remove the scent glands in small of back and under each foreleg between the shoulder and rib.
The recipes all involve boiling the meat, which leads me to believe it may be kind of dry. There is lots of fat on a possum. You are supposed to cut it off before starting to cook it. This being The End Times and all, I would rend the possum fat and use the oil in the tin foil lantern my mother taught me how to make when I was little.
